Vegan Lemon Tart with Shortbread Crust
I am going to admit, I do have a sweet tooth and I swear it has taken on new heights since I am breastfeeding! I have literally been craving a sweet and tangy, gooey, citrussy slice for weeks!
I also had my mind set on a shortbread crust which to my own surprise is extremely simple to veganize, yeiii. I found the perfect recipe over at @heartofabaker but made some minor changes to it.
You will need:
- 1 Cup all-purpose flour
- 1/3 Coconut oil (soft or melted)
- 1/4 cup powdered sugar
- Pinch of salt
- 1 Ripe banana
- Zest and juice of 3-4 organic lemons
- 1/2 Cup sugar
- 2 Tbsp tapioca flour
- 1 Tsp guar gum
- 2 Tbsp all-purpose flour
- 2 Drops of dōTERRA Lemon oil
- Powdered sugar (for dusting)
